Cassia Bark is part of the cinnamon family and is used as a flavouring agent,
for sweets and desserts, but is also used in curries and when cooking meat to
give a sweeter flavour.

Cassia is occasionally added to true cinnamon for a coarser, thicker texture
and is distinguished from cinnamon sticks which has thin layers easily ground
into powder form.

Cassia sticks, on the other hand, are extremely hard, are usually made up of
one thick layer and need to be broken into smaller pieces if grinding.
